Archetype: I'd go with Vanilla barbarian. It comes with Uncanny Dodge and since you need high-ish Dex for dual-wielding anyway, medium armor will work just fine. Strength as high as possible, Dex at 15 or 16, rest in Con. Use +Dex items to qualify for Improved and Greater TWF later on.
