As long as you are not rushing, hold the button that zooms out and shows your current defensive play (R2 or Right Trigger I think). Once the ball is hiked, it will keep you in that more zoomed out view. Higher difficulties will reset this view mode, and you will need to quickly press it again. Do not use it when rushing.
